Last week was Spring Break week for us. My sister and her family of 7 came to visit, so we had a full house with lots of bedroom sharing and sleeping on air mattresses, bean-bag chairs, or whatever could be found!
One night, everyone was in the mood for a little treat before bed, so I made these bits of deliciousness. I love chocolate. LOVE it. But as far as cookies go, I'd take a good oatmeal raisin over a chocolate chip cookie most of the time.
For these cookies, I altered the classic cookie recipe on the back of the Quaker Oats box to accommodate coconut oil and butter. The result was possibly the best oatmeal raisin cookie I've had.
They were all devoured before bed. And no bad dreams. :)
Oatmeal Raisin Cookies
1/2 cup butter, softened
6 Tablespoons coconut oil (room temp)
3/4 cup brown sugar
1/2 cup sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups + 2 Tablespoons all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
3 cups whole rolled oats
1 cup raisins
Heat oven to 350.
Beat together butter, oil, and sugars. Add eggs and vanilla.
Mix flour with baking soda, cinnamon and salt. Combine this with wet mixture.
Stir in oats and raisins.
Drop rounded tablespoons on greased or lined cookie sheet. Bake 9-10 minutes, until light brown.
Makes 40+ cookies. (They were consumed so fast, I didn't get a clear count.)
