Granola bars are the tip of the iceberg


I like to create. ALOT.  So, I am sharing my makings here and now (and in the future). 

Today I made these little gems of grainy goodness. I don't have step-by-step illustrated directions with this one, but, let's face it, we all scroll down to the ingredients most the time anyway--am I right?  

My hubs and kiddos can't get enough of these babies. I like to wrap them in Press'n Seal (one the great signs of the progression of humanity), and store them in an airtight container in the fridge. I'm not sure how long they keep--they haven't lasted more than a few days in my house!
I made two versions. The lighter one (in color, not calories) was with the recipe I will post here. The darker ones are with molasses instead of honey and 1/2 tsp of ginger and allspice in addition to the cinnamon.

Chewy Granola Bars
2 cups oats
1 cup flour (I use whole wheat or oat flour)
3/4 cup brown sugar
3/4 cup raisins/craisins
1/2 cup wheat germ/ ground flax seed/ ground chia seed
1/2 tsp salt
1/2 tsp cinnamon
1/2 cup chopped nuts/ flaked coconut
1/2 cup vegetable oil
1/2 cup honey
1 egg
2 tsp vanilla

Mix dry and wet ingredients separately
and then combine.

Line 9X13 pan with foil, going up sides.
Spray foil with vegetable oil spray.

Bake at 350 25-30 min.

Cool and cut into bars.
